Grades of Pure Maple Syrup
On January 1st, 2015, NYS adopted the International Grading System for maple syrup. There are 4 grades. The very, very darkest grade is called commercial. Grade A Light Amber is now called Golden Color Delicate Taste. Grade A Medium Amber is now called Amber Color Rich Taste. Grade A Dark Amber is now called Dark Color Robust Taste. Grade B is now called Very Dark Color Strong Taste.
What makes the grades is the time of the maple season. As the buds swell into leaves, you get a darker syrup with more maple flavor.
